From Our Table to Yours: Butternut Squash Soup

With Thanksgiving on the horizon, we wanted to share one of our favorite holiday recipes with you; Butternut Squash Soup. The best part of this recipe is that it utilizes the crockpot!  The recipe is as simple as can be and can be fully vegetarian if you use vegetable broth instead of chicken broth.  Personally, I think the chicken broth adds a richer flavor, but it’s not necessary.  Also, the recipe calls for roasted chickpeas.  I did it once and thought it was too much effort for not enough outcome.  I would skip the chickpeas.  While we love this recipe for Thanksgiving, its also just a great Fall/Winter recipe.  I usually make this on a Monday (because Mondays are crazy and who couldn’t utilize a crockpot) and then have leftovers for lunch throughout the week!  Find the full recipe here!
